As the cold weather sets in, it's time to comfort yourself with a delicious mac and cheese. This tasty version, enriched with shrimp and a blend of sharp cheddar and gouda cheeses, is a true feast for cheese lovers. Perfect for a cozy evening or a friendly meal, this dish will warm your heart and delight your taste buds with its creamy texture and perfectly golden gratin. 

INGREDIENTS 

Sharp cheddar cheese: 100 g 
Gouda cheese: 60 g 
Shrimp: 150 g 
Macaroni: 500 g 
Butter: 10 g 
Milk: 150 ml 
Flour: 10 g 
Paprika: 1/2 tsp 
Garlic powder: 1 tsp 
Onion powder: 1 tsp 
Lemon juice: 1 tsp 
Salt and pepper 
Flat-leaf parsley: for garnish 

INSTRUCTIONS 

1.Preheat the oven to broil at 450°F (230°C). 

2.Grate the sharp cheddar and gouda cheeses, set aside. 

3.Cook the macaroni according to package instructions, reserving a little cooking water. 

4.In another saucepan, whisk flour and butter over medium heat until golden brown. Add milk gradually while whisking until a sauce forms. 

5.To the sauce, add 3/4 of the grated cheese and stir until melted. Also add paprika, garlic powder, onion powder, salt, and pepper. Set aside. 

6.Sauté the shrimp with a touch of lemon juice in a skillet over medium heat. 

7.Mix the reserved pasta cooking water with the cheese sauce, shrimp, and cooked macaroni. 

8.Transfer the mac and cheese mixture to a gratin dish, top with the remaining grated cheese, and bake until the top is nicely gratinated.
